Basic latte art: monk’s head
Hi, I’m Paolo from “Le Piantagioni del Caffè” and in this video, I’m going to show you a basic latte art design: the monk’s head.
As always, we purge the wand before use, and we dip it 1 cm below the surface of the milk to create a vortex. At first, we’ll feel the air entering the milk, then during the second step we bring the milk to serving temperature, the temperature that, as a serving range, is around 55/65 degrees.
At this point, we create a silky microfoam and mix the milk at the same time so that the surface becomes glossy. We separate the same quantity of milk and foam into another milk jug so that to make two cappuccinos we have the same level of milk and foam in each of the milk jugs.
At this point, we break the surface of the coffee in the cup, and pour the milk with the jug held high, towards the centre, then we stop, re-mix and then bring the tip of the milk jug closer to the surface of the coffee to create a brown border and a white spot reminiscent of a monk’s head.
