Has long coffee less caffeine?
Hi, I’m Paolo from “Le Piantagioni del Caffè” and in this video I’ll answer the question if
long coffee has more or less caffeine.
The answer is: long coffee has more caffeine and there’s more to that!
All the water that goes through the ground coffee from the moment where the brewing ends to the time it takes to make it long, that water brews several other substances.
In addition to caffeine, it brews the chlorogenic acid which degrades to form quinic and
caffeic acid. These two give extreme bitterness to coffee.
Also, we will have a more diluted drink with less body.
Therefore, next time you go to the cafeteria and you want a long coffee because of the kick effect, I suggest asking for a double coffee which is more balanced from the organoleptic point of view.
Or if you want a more diluted coffee, it is better to ask for some hot water to lengthen your coffee.
