Syphon
Hello, I’m Paolo from “Le Piantagioni del Caffè” and in this video I will tell you about Syphon.
This device was created in 1830 by the Berlin company Loeff.
The patent was later taken up by Madame Vassieux in 1841.
However, it was possible to solve the problem of glass breaking due to heat only at the beginning of the 20th century. Thanks to some refinements, in the early 1900s, it was improved what is still today a method that really resembles a chemistry experiment.
We recommend using it for the brewing of our Alto Palomar and Cachoeira da Grama.
Also, it is desirable to preheat the water to 90 Celsius degrees and to use 75 grams of coffee per liter of water (for this device 25 grams and 333 ml of water).
The brewing time ranges from 2 to 3 minutes and it is suggested a coarse grind resembling sea salt.
