First of all, the coffee should not be over-roasted. It should not look very dark.
Even worse, it must not have any oily residue on the bean’s outer layer.
It shouldn’t have spots and if it does, that could mean either the raw material is poor or the blend in the grinder has already been roasted.
That is, the roaster has taken the raw components, mixed them and then roasted them. Which means that he has not respected the intrinsic characteristics of each component.
Finally, I advise you to be wary of all those cases where you can’t see what is inside the bean hopper.
