This is how Michele Valotti presented his project:
“I’m Michele Valotti and I’m the chef at Trattoria La Madia in Brione. What I do, support and promote is the most authentic, true, imperfect and variable cuisine possible. In my kitchen I don’t want to start from a preconceived idea of a recipe with a final result, but I try to adapt to a vital and true raw material with a story to tell. I start constructing the dish from this point and I change the menu often!
You’ll never eat the same dish twice at Trattoria La Madia because, although the recipe remains
basically the same, variables come into play due to adaptation to an ingredient that is so authentic and therefore changeable that it gives life to a different dish. This is really what I try to do because I don’t like standard concepts: when something is fixed, immobile, it’s dead, and what I want to do is something different! I use Le Piantagioni del Caffè coffees because the end of a meal is one of the main moments of a restaurant lunch or dinner: it’s the memory that our restaurant gives to our clients, and it’s a sign of our attention to the raw materials that we use. Le Piantagioni del Caffè, with their different single-estate coffees that express territoriality and seasonality, are perfectly in line with my idea of cuisine, with the idea of Trattoria La Madia cuisine!”
