Motozintla

This coffee is grown in southern Mexico, in the Motozintla region of Chiapas, in the shade of the Ingas trees.
This blend of varieties is the work of Jorge Arreola Nava. After harvesting and drying on the patio and in a mechanical dryer, the coffee is decaffeinated using the “Mountain Water” process by Descamex (this process was developed in 1980).

“Mountain Water” process
Water decaffeination process is a chemical free technique and is one of the most respected and widely used methods in the high-quality decaffeinated coffee industry. This process uses a green coffee concentrate composed of water saturated with all the solid components available in green coffee, with the exception of caffeine.
To remove caffeine, coffee beans are exposed to steam, soaked in water (containing the components to be preserved), carbon filtered and then dried in ovens.
Our water decaffeinated coffee has no trace of those unpleasant flavours which are often found in decaffeinated coffees. It is sweet as honey and shows cocoa notes.
